The vines

Terroir

Hard limestone screes of the mountain of La Clape. Warm and dry climate tempered by the Mediterranean. Slow ripening thanks to cooler coastal nights.

Growing

Sustainable practices according to High Environmental Value charter (level 3) in respect for the environment and complexity of the wine: composted pomace, mulched prunings, plowing, no insecticides, no weedkillers.

Varieties

Syrah (40%), Grenache (40%), Mourvèdre (20%). Cordon de Royat trellising, hard-pruned for strictly controlled yields of about 35 hl/ha.

The Cellar

Harvest

Two-months-long picking according to maturity of each variety. Grapes are hand-selected.

Vinification

Total de-stemming, juice is gravity-fed into vats, traditional temperature-controlled fermentation. Long maceration (30 days) with no trituration so as to extract only the finest elements.

Ageing

Development of complexity and natural stabilisation in vats during 18 months. Static clarification by gravity, no fining nor filtrating.

The wine

Tasting note

Deep red colour with black highlights.The aroma evokes ripe red and black fruits such as blackcurrant and also pepper and liquorice. Smooth, fruity and balanced wine, structured by delicate and silky tannins.

Ageing potential

Enjoy fresh and fruity in the first 5 years. Ageing potential of 8 to 10 years.

Food pairing

Nicely complements cold cuts, red grilled meats or in sauce, cheeses.

Service

Aerate and drink at around 18°C/65°F.
